New Indian restaurant opens in Huntsville

If you like Indian cuisine, you’re going to love this news: Huntsville’s first Indian restaurant was inaugurated today and will officially open Saturday, June 16.

Diana Patel is the face behind the Marigold restaurant, located on Huntsville’s main street. She comes from a business background having owned the local Pizza Pizza franchise for some time as well as the Red Maple in the West End, formerly Super 8 .

She said she was often asked about Indian food in Huntsville by locals as well as those visiting the area, but she always came up empty. That’s when she began planning to open a restaurant here as she could not convince established restaurants to come to the area, she explained.

Patel said she wants to see the area grow and said providing Indian cuisine will help. It will be “a place to spend some time with the family and eat good food,” she said.

Her chef is from India and has moved to the area from B.C. In fact, both of the chefs are from India and will be making authentic Indian food from scratch.

“We have to work together to help the community to grow and bring more tourists to this town,” said Patel, who added that she’s not out to compete with anyone but looks forward to working with the business community as a whole.

Linda Simpson, who’ll be managing the restaurant, said she’s excited about the new venture. She said there’ll be chicken, lamb, seafood and vegetarian dishes with different spice levels. “We’ve got some Indian beer coming in, we’ll have some beautiful Indian drinks…” she added.

Simpson said there will be approximately seven people working at the restaurant, which will have seating for 40 people plus room for four people at the bar. There are hopes to get an outdoor patio as well.

Tentative restaurant hours will be 11 a.m. to 10 p.m. on weekdays and open until 11 p.m. on weekends.

Huntsville Mayor Scott Aitchison and MP Tony Clement were at the ribbon-cutting inauguration and both expressed their appreciation for Indian cuisine.

    I’ve been saying to friends for years that the last thing we need is another fast-food franchise selling processed-to-death “food”.
