Every time we pick a tomato or green pepper, we are thankful in so many ways. We appreciate the food cost savings (huge with today’s inflation). We get to eat fresh, healthy, tasty, organic produce. Best of all, we know we have reduced the vegetable’s carbon footprint to zero by cutting out long-distance transportation. It’s not too late to plant turnips and kale, as well as next year’s garlic (in November). If we avoid an early frost, spinach, lettuce and arugula will produce as well. Save money, eat healthy, and sequester carbon! Watch for Part Two: Fruits, coming out next week.
