They don\u2019t mind the cold and the ground is always moist in the spring. Carrot seeds need to be constantly wet in order to germinate so you may be watering your carrot bed for a couple of weeks.<\/p>\n<p><strong>Growing tips:<\/strong><\/p>\n<ul>\n<li>In the spring, sow carrot seeds in fertile, well-worked soil about two weeks before your last frost date. In cool climates, continue planting every three weeks until midsummer.<\/li>\n<li>In summer, begin sowing seeds for fall and winter carrots 10 to 12 weeks before your average first fall frost.<\/li>\n<li>Prepare the planting bed by loosening the soil to at least 12 inches deep. Thoroughly mix in a 1-inch layer of mature compost or a half-inch layer of vermicompost (carrots love what earthworms leave behind).<\/li>\n<li>Sow your seeds about a quarter-inch deep and 2 inches apart, in rows spaced at least 10 inches apart; carrots do well in double or triple rows. Thin seedlings to 4 to 6 inches apart, depending on the variety\u2019s mature size.<\/li>\n<li>Pull or dig spring-sown carrots when roots reach mature size and show rich color. Taste improves as carrots mature, but do not leave mature carrots in warm soil any longer than necessary.<\/li>\n<li>Summer-sown carrots that mature in cool fall soil can be left in the ground longer, but should be dug before the ground freezes to preserve their quality.<\/li>\n<li>Remove tops to prevent moisture loss, rinse clean, and store in a refrigerator or cold root cellar. Most varieties keep for several months in the fridge. Carrots also may be canned, pickled, dried or frozen.<\/li>\n<\/ul>\n<div style=\"float: left; margin-right: 14px;\"><strong><broadstreet-zone zone-id=\"45658\" keywords=\"\" soft-keywords=\"true\" zone-alias=\"\"><\/broadstreet-zone><\/strong><\/div>\n<p>Recommended varieties:<\/p>\n<p><strong>Nantes<\/strong> are fast and easy to grow, and adapt to a range of climates and soils.<br \/>\n<strong>Chantenay<\/strong> carrots develop stocky roots that become sweeter as the soil cools in the fall.<br \/>\n<strong>Miniature<\/strong> carrots have small, shallow roots that are often quite sweet. They\u2019re good for heavy clay soil.<br \/>\n<strong>Imperator<\/strong> carrots are <em>long<\/em> and need deep, sandy soil to thrive.<br \/>\n<strong>Danvers<\/strong> carrots make great juice, and the sturdy roots store well, too.<\/p>\n<hr \/>\n<h4><strong>Recipes<\/strong><\/h4>\n<h6><strong><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-36732 alignright\" src=\"https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Honey-roasted-carrots.jpg\" alt=\"\" width=\"370\" height=\"493\" srcset=\"https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Honey-roasted-carrots-225x300.jpg 225w, https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Honey-roasted-carrots.jpg 616w\" sizes=\"auto, (max-width: 370px) 100vw, 370px\" \/>Honey-Roasted Carrots with Tahini<\/strong><\/h6>\n<p><strong>Ingredients for the carrots: <\/strong><\/p>\n<ul>\n<li>3 tbsp honey<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1 tablespoon coriander seeds, toasted and lightly crushed<\/li>\n<li>1 1\/2 teaspoons cumin seeds, toasted and lightly crushed<\/li>\n<li>3 thyme sprigs<\/li>\n<li>12 large carrots, peeled and each cut crosswise into two 2 1\/2-inch batons (3 lb)<\/li>\n<li>1 1\/2 tablespoons cilantro leaves, coarsely chopped<\/li>\n<li>Salt and black pepper<\/li>\n<\/ul>\n<p><strong>Ingredients for the Tahini Yogurt Sauce: <\/strong><\/p>\n<ul>\n<li>3 tablespoons tahini paste<\/li>\n<li>2\/3 cup Greek yogurt<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<li>1 clove garlic, crushed<\/li>\n<li>Salt<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 425\u00b0F<\/li>\n<li>Place all the ingredients for the tahini sauce in a bowl with a pinch of salt. Whisk together and set aside.<\/li>\n<li>Place the honey, oil, coriander and cumin seeds, and thyme in a large bowl with 1 teaspoon salt and a good grind of black pepper. Add the carrots and mix well until coated, then spread them out on a large baking sheet and roast in the oven for 40 minutes, stirring gently once or twice, until cooked through and glazed.<\/li>\n<li>Transfer the carrots to a large serving platter or individual plates. Serve warm or at room temperature, with a spoonful of sauce on top, scattered with the cilantro.<\/li>\n<\/ol>\n<hr \/>\n<h6><strong>Ginger Carrot Dressing (from 101 Cookbooks) <\/strong><\/h6>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/3 cup full-fat coconut milk<\/li>\n<li>1\/4 teaspoon ground turmeric, or more to taste<\/li>\n<li>5 tablespoons peeled ginger, chopped to measure<\/li>\n<li>3 medium farmers&#8217; market carrots, scrubbed<\/li>\n<li>1\/2 of a serrano pepper, stemmed, or to taste<\/li>\n<li>1\/3 cup extra virgin olive oil<\/li>\n<li>1\/2 teaspoon fine grain sea salt<\/li>\n<li>2 tablespoons toasted sesame oil<\/li>\n<li>1 tablespoon miso (optional)<\/li>\n<li>1 tablespoon maple syrup<\/li>\n<li>1\/4 cup \/ 60 ml brown rice vinegar<\/li>\n<li>4 medium shallots, peeled (or less if your shallots are strong)<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ol>\n<li>Puree the coconut milk, turmeric, ginger, carrots, pepper, olive oil, salt, toasted sesame oil, miso, maple syrup, brown rice vinegar, and shallots in a blender until very smooth.<\/li>\n<li>Taste, and adjust, if needed, with more salt or vinegar, or any other ingredient you think might need a little boost.<\/li>\n<\/ol>\n<hr \/>\n<div id=\"attachment_36730\" style=\"width: 380px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-36730\" class=\" wp-image-36730\" src=\"https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Carrot-soup.jpg\" alt=\"Carrot soup (Photo: 101 Cookbooks)\" width=\"370\" height=\"246\" srcset=\"https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Carrot-soup-300x199.jpg 300w, https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Carrot-soup.jpg 680w\" sizes=\"auto, (max-width: 370px) 100vw, 370px\" \/><p id=\"caption-attachment-36730\" class=\"wp-caption-text\">Carrot soup (Photo: 101 Cookbooks)<\/p><\/div>\n<h6><strong>Carrot Soup (Photo and recipe from 101 Cookbooks)<\/strong><\/h6>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 1\/4 pounds carrots<\/li>\n<li>1 tablespoon extra-virgin olive<\/li>\n<li>2 medium cloves garlic, minced<\/li>\n<li>1 large yellow onion, chopped<\/li>\n<li>3 cups+ vegetable stock or water<\/li>\n<li>juice of 1\/2 a lemon<\/li>\n<li>fine grain sea salt (as much as you need)<\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<ol>\n<li>Take the tops off the carrots (if they have tops) and give them a good scrub. Cut them into 1-inch segments and set aside.<\/li>\n<li>Heat the olive oil in a large, heavy soup pot over medium heat. Add the garlic and onions and saute for a few minutes or until the onions start to get translucent. Add the stock and carrots and bring to a gentle boil. Lower the heat and simmer for 20 &#8211; 30 minutes or until the carrots are tender &#8211; longer if your carrot pieces ended up larger &#8211; but try not to overcook. Remove from heat and cool for a few minutes.<\/li>\n<li>Puree with a hand blender.<\/li>\n<li>Finish with a drizzle of great extra-virgin olive oil, a potent thread of toasted sesame oil, a fiery olive oil infused with crushed red pepper flakes, a thinned-out oregano pesto, or whatever twist you come up with.<\/li>\n<\/ol>\n<hr \/>\n<div id=\"attachment_36733\" style=\"width: 382px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-36733\" class=\" wp-image-36733\" src=\"https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Moroccan-chickpea-salad.jpg\" alt=\"Moroccan Carrot and Chickpea Salad (Photo: 101 Cookbooks)\" width=\"372\" height=\"248\" srcset=\"https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Moroccan-chickpea-salad-300x200.jpg 300w, https:\/\/media-doppleronline-ca.s3-accelerate.amazonaws.com\/2017\/08\/Moroccan-chickpea-salad.jpg 620w\" sizes=\"auto, (max-width: 372px) 100vw, 372px\" \/><p id=\"caption-attachment-36733\" class=\"wp-caption-text\">Moroccan Carrot and Chickpea Salad (Photo: 101 Cookbooks)<\/p><\/div>\n<h6><strong>Morrocan Carrot and Chickpea Salad (Recipe and picture from 101 Cookbooks)<\/strong><\/h6>\n<p><strong>Dressing ingredients:<\/strong><\/p>\n<ul>\n<li>1 tablespoon cumin seeds<\/li>\n<li>1\/3 cup \/ 80 ml extra virgin olive oil<\/li>\n<li>2 tablespoons fresh lemon juice<\/li>\n<li>1 tablespoon honey<\/li>\n<li>1\/2 teaspoon fine sea salt, plus more to taste<\/li>\n<li>1\/8 teaspoon cayenne pepper<\/li>\n<\/ul>\n<p><strong>Salad ingredients:<\/strong><\/p>\n<ul>\n<li>10 ounces carrots, shredded on a box grater or sliced whisper-thin on a mandolin<\/li>\n<li>2 cups cooked chickpeas (or one 15- ounce can, drained and rinsed)<\/li>\n<li>2\/3 cup \/ 100 g dried pluots, plums, or dates cut into chickpea-sized pieces<\/li>\n<li>1\/3 cup \/ 30 g fresh mint, torn<\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<ol>\n<li>To make the dressing, first toast the cumin seeds in a dry skillet until fragrant and lightly browned, a minute or two. Let cool, and grind to a powder with a mortar and pestle.<\/li>\n<li>In a bowl or jar, whisk together the olive oil, lemon juice, honey, ground cumin, salt, and cayenne pepper. Set aside.<\/li>\n<li>In a medium bowl, combine the carrots, chickpeas, dried pluots, mint, and almonds, and rose petals (if you&#8217;re including those as well). Gently toss until everything is evenly coated. Serve immediately, or cover and refrigerate until ready to serve. (You can toss this salad, minus the almonds, hours in advance.
